Storing it is strictly necessary for the function you asked for, Section 25(2) no. 2 TDDDG. This website links to GitHub, Flathub and the GNOME GitLab. These sites are only contacted when you follow a link, and their own privacy policies apply there.

The releases and download link on the start page are fetched from GitHub by this server, not by your browser. No data about you is passed on for it. Only when you click the download button does your browser fetch the file from GitHub.
